  • 20 jumbo marshmallows
  • 1 cup pancake mix
  • 1 large egg
  • ¾ cup milk
  • 2 to 3 cups vegetable oil (for frying)

Directions

Prepare the Batter

In a medium mixing bowl, combine the pancake mix, egg, and milk. Stir until the mixture is smooth and free of lumps. The batter should be thick enough to coat the marshmallows without dripping excessively.

Heat the Oil

Pour about 3 inches of vegetable oil into a deep pot and heat to 350°F (175°C). A kitchen thermometer can help you maintain the ideal temperature.

Coat the Marshmallows
